Ingredient List/ Mise en Place:
Herbed Tomato Salad with Orange Basil Vinaigrette
(Serves 50-60 guest)
10 English cucumbers, qrted, halved and thinly sliced
5 lbs cherry tomatoes, halved
5 lbs tomatillos, qrted
5 medium red onions, halved and thinly sliced
5 cups chopped Italian parsley
5 cups chopped arugula
2/3 cup chopped mint
1 lb feta cheese crumbles

Orange Basil Vinaigrette
(Yields 50-60 ½ oz portions)
2 ½ cups fresh basil
2 ½ cups fresh mint
½ tbsp grated orange zest
1/3 cup orange juice
¼ cup white wine vinegar
4 garlic cloves chopped
2 ½ cups vegetable oil

Chipotle & Cilantro Crusted Beef Tenderloin
(Serves 50 to 60 guest / 3-4 oz portions)
15 lbs beef tenderloin
2 pkgs pearl onions
3 cups corn oil
3 cups chopped cilantro
1 cup chipotle peppers chopped
2 pinches dried red pepper flakes
1 box plain bread crumbs
4 large garlic cloves minced
2 tbsp ground cumin
S&P as needed

Red Wine Sauce
(Serves 50-60 guest ½ oz portions)
2 qrts beef stock
1 750 ml bottle red wine
½ lb cold butter
Cornstarch, s& p as needed

Orzo with Black Beans & Corn
(Serves 50- 60 guest 1-2 oz portions)
5 lbs orzo pasta
3 cans black beans
3 cans white corn
2 bunches fresh oregano
2 bunches fresh thyme
Lemon and lime juice as needed
S&P as needed

An assortment of crusty breads
4 to 5 loaves of various rustic breads

Vanilla Bean Pound Cake with an Espresso Glaze   
(Yields 2 Bundt pound cakes/ serves 60)
4 vanilla beans split lengthwise
8 large eggs

4 boxes quality pound cake mix (high % cake flour) * follow instructions on box*/ ensures consistency
and quality rather than making from scratch

2 cup vanillas extract (separated) 1 for cakes and 1 for coffee
1 cup reduced espresso coffee
1 lb bag of powdered sugar

- prep as needed
- Vacuum 1st floor and 2nd floor clean qrts as needed
- Check with Mrs. “A” to see if we need to change anything about social ( in house briefing)
- Set up table and bar area

Wed, 1/23/08
- Prep and clean qrts as needed
- Prep Uniform’s for General’s Beaufort trip (call Maj. Shipley for brief)
- Staff should arrive around 1600 or earlier/ CG Protocol will arrive around 1800!!

Gear is staged in basement and ready for event!
