The Sweeter Side of Military Chefs By Staff Sergeant Guy Winks
This month we have seven different Military Chefs from various branches of the service gathered here for one purpose and one purpose only: Dessert!! TSgt. Emily Popkoski, the Air Force Junior Enlisted Aide of the Year is here, along with fellow Air Force Chefs Jacqueline Stanton, Jessie Gregorio and Randy Gill. From the Coast Guard Academy we have FS1 John Lopez and FS1 Eric Williamson. Last, but not least, we have David Steinke, a Navy Chef.
They are taking “Individual Pastries and Desserts”, a continuing professional education course offered here at the college. The course is a week long and focuses on combining both classic and contemporary techniques, which is essential for today’s pastry production. This exploration of traditional European pastry methods is sure to enhance the sweet offerings in any food service establishment.
During this course, these Military Chefs will learn how to make and utilize basic preparations such as puff pastry, pate a choux, sponge cake, frangipane, and meringue. They will prepare and use various icings, fillings and glazes, including buttercream, ganache, mousse, pastry cream and Bavarian cream. They will produce roulades, tartlets, layered desserts and an array of other classic and contemporary pastries using molds, edible containers, and piping techniques.
