Hyde Park, NY - Congratulations to Cesar Balmaceda and Jesse Rogers of the United States Marine Corps on attaining ProChef level II certification from The Culinary Institute of America and Certified Chef De Cuisine from the American Culinary Federation! At this level, Cesar and Jesse had to display competency in basic food science, baking, nutrition, healthy cooking techniques, garde manger, and various Mediterranean cuisines; demonstrate basic management and supervisory skills; and understand the basic concepts of financial controls of a food operation. The intense 4 day exam consists of several written tests as well as practical cooking and baking.
